Eggs Benedict

My mom makes these for Sunday brunch quite often. They're probably one of the favorites!
eggs
English muffins
pre-cooked bacon, sausage, turkey, or ham
sliced cheese
Hollandaise sauce (packet mix or homemade)
paprika

Poach the eggs. Place open English muffins on cookie or baking sheet (it's good it is has a higher edge to hold in the Hollandaise sauce). Then place a slice cheese of choice, meat of choice, and poached egg on each. Cover with Hollandaise sauce. Bake in the oven to warm everything and melt the cheese.

Mom usually leaves them in the oven on a low setting until everyone is there and ready to eat. One of our favorite side dishes with this is mixed fruit and yogurt. The fruit will change from time to time depending on what she has on hand.
