I was just looking at the admission ticket prices for this year's state fair, and I thought I'd write up a quick post about which days are cheapest to bring your family.

Cooking the Deals of July 24-30

Back to our regularly scheduled meal plan posts! Thanks for being patient with me last week.

Chicken Breast Stuffed with Bacon & Feta

8 oz. feta cheese
8 oz. bacon, cooked & crumbled
6 boneless, skinless chicken breasts, pounded flat (if using frozen, make sure to thaw ahead of time)
1 tbsp olive oil
1 tsp oregano
1 tsp basil
1 can or 1 large diced tomatoes

Mix feta & bacon crumbles in a bowl, then spread down the center of each chicken breast. Fold the breast in half and secure with a toothpick. Put oil in a pan & heat, then add stuffed breasts, turning to brown while cooking. Add the tomatoes (and juice if you are using canned) & herbs, and simmer for 15-20 minutes (until chicken is cooked through). Serve chicken topped with sauce & tomatoes from pan.

Honey Dijon Chicken

3-4 lb chicken
1 stick butter
2/3 c. honey
1/4 c. dijon-style mustard
salt to taste

Put chicken in lined or sprayed crock pot, and season with salt. Mix remaining ingredients in a bowl and pour over the chicken. Cook on low for 6-8 hours. About half-way through, baste by spooning juices over the chicken.
