Next-to-Nothing Pasta Salad
I love making pasta salad for family get-togethers (or just to stash away and eat all myself!) Usually I pull out a box of Suddenly Salad, but today, I decided that I wanted to start using up all these boxes of pasta that I've gotten for free, and while I'm at it, the salad dressing too.

Chicken Fiesta Salad
2-4 chicken breasts
2 bags of lettuce
1 cup shredded cheese (jack cheese is probably best)
1 can of corn
1 can of black beans
onions
peppers
ranch dressing
Bake (or grill) fresh chicken in oven at 350 degrees for 18-22 minutes (bake frozen longer). Cut into chicken to make sure it is fully cooked (clear juices, no pink). Cut chicken into chunks or cubes. Fill a large bowl with lettuce, top with chicken, cheese, drained corn, drained black beans, chopped onions, and sliced peppers. Either top with ranch dressing or have a bottle on the side to let everyone put on their own.

Chicken Wraps
I almost always get a chicken ranch wrap when we go out to eat. They're quick and easy to make at home and so much cheaper!
