Okay, so I'm Nesting...
I finally admitted to myself yesterday that, with 4 weeks to go until our baby's due date, I'm nesting. Besides getting the nursery together and such, I've been making several freezer meals so that the hubbs' life is much easier once our daughter arrives.

Sour Cream Chicken Enchiladas
about 2 chicken breasts, cooked & shredded
1/2 c. sour cream
1 can cream of chicken (or mushroom) soup
1/2 c. shredded cheese, plus some extra for topping (I like cheddar)
6-8 tortillas (depending on size)
Optional:
diced green chilies
diced onion
salt & pepper
In a bowl, mix together sour cream, cream of chicken soup, shredded cheese, and any optional ingredients. Take about 1/4 to 1/3 of the mixture and set it aside. In the remaining mixture, mix in the chicken. Spoon some of the chicken mixture down the center of each tortilla. Roll each tortilla up and place in a baking pan, seam side down. Take the mixture that was set aside and spread over the top of the tortillas in the baking pan. Sprinkle the top with more shredded cheese. Either package for freezing, or bake at 375 for about 30 minutes. (If baking from the freezer, baking time will need to be longer. Check the center to make sure it is heated all the way through.)

Shredded Chicken
This is great to make for the freezer, so you have quick meat to pull out and make into tons of different recipes. Check out this list of different meal ideas.

Chicken Pineapple Stir Fry
1 lb. chicken breasts, sliced in strips
1 tbsp oil
1 package or can of frozen mixed or stir-fry veggies, thawed
1 can pineapple (or about 1 1/2 c. fresh pineapple)
2 c rice (white or wild), cooked to package directions
1/2 c peanuts or cashews
soy sauce to taste
Heat oil in a non-stick skillet. Add chicken, and cook until center is not pink. Add veggies, pineapple, and nuts. Cook until veggies are tender. Serve over rice, adding soy sauce, if desired.

lettuce (romaine, mixed greens, fresh from the garden - your choice)
feta or blue cheese crumbles
any fresh berries of your choice
raspberries
blackberries
strawberries
blueberries
fresh peas (edible pod, or not - your choice)
pecans, cashews, or walnuts (we get walnuts from my grandparents in Oregon who have a walnut tree in their backyard)
salad dressing (honey mustard or a raspberry vinaigrette is best)
Grill, bake, or broil chicken until juices are clear. Slice in strips and let cool. Toss together lettuce, berries, peas, and nuts. Add chicken and top with dressing.

Chicken Pot Pie on a Biscuit
I just made this the other night for dinner, and it was great! We even had enough leftover for two freezer meals for when the baby comes! The hubbs loves that I'm making his life easier!
